I hear you, modeling multiFX units can be a pain to adjust. The other guitarist has an AxeFXIIUltra and he is still figuring it out. Needs a laptop really to adjust sounds efficiently.
This obviously has knobs, same as the pedals it includes, but it doesn't remember knob positions. It just works with the settings the knobs are at, you only program them on and off. But many units remember knob positions. I use a Mooer Brown sound amp simulator pedal at home, and it doesn't matter what position the knobs are at, it will remember the positions last selected before pressing the button. Which is handy, because then you can have totally different settings for each channel with the same knobs.
Can't remember but I've used digital thingies which have knobs, and when you turn the knob it does nothing, until you come to where it was. After that it works both ways. Ie if you have saved treble setting at 12 o clock and later the treble knob is at zero, turning the knob does nothing until after 12, and if you want to cut treble, you need to bring it past 12 and then back. I think that's the best way to do it in gadgets with analog controls for digital domain.
