We had a delicious pasta with bolognese sauce for lunch. My wife makes it very well. Small little things in life to be thankful for - and we are -.

Funny, to me, but the Brits say "pasta bolognese" while we here in the U.S. just say "pasta with meat sauce."
I've long wondered why the difference in the terms.

Sometimes that kind of questions have no answer. Good to know how you call it there. Here in spanish is literally lke that : pasta con salsa boloñesa, or just simply pasta boloñesa.

Bolognese sauce is a cream based sauce with a touch of tomato.
Meat sauce is a tomato based pasta sauce with meat thrown in.
So for bolognese, you simmer some milk and herbs, onions, some peeled/diced tomatoes and meat until it all kinda pulls together into a creamy sauce.
For what we call meat sauce, which is a basic Italian ragù, we just simmer some meat in tomatoes juice, puree, and probably some diced tomatoes.
They're both essentially a Ragù - which is just Italian for meat based pasta sauce, but then there's the various regional or taste based differences that all have their own names too.

But I do know that you can go into a restaurant in the U.K. and order "spag bol"
and in a U.S. restaurant that will get you a blank stare from your server.

I uhh, accidentally ended up managing a couple of kitchens and sous chef-ing at a place over the last few years is the only reason I even know.
I'm definitely not the person to say servers are perceptive or knowledgeable in any way, I've had too many heated arguments across the threshold/window
Basically don't ask a server anything besides for a drink (keep it simple), a refill, and ranch dressing.
